Happy Friday my favorite foodies!

How are you all doing this Friday? Do you have anything fun planned for the weekend? I just finished reading a really good book, Amazonia. It’s by a. favorite author of mine, James Rollins. I think Amazonia just may be my new favorite book of all time now!


It is a book about a group of explorers who went into the Amazon Rainforest years ago and none of them came back. Until, recently one of them does make it out alive though they are in a very bad condition and end up dying too soon to be of any help. Well, the son of one of the previous group members goes in with a new team to find out what happened. There is lots of mystery, science, and adventure in this book.

If you are looking for a new book to read and haven’t read this one, I highly recommend you give this book a read.

This weekend, I am planning on stopping by Barnes and Noble to pick up another book by James Rollins to start reading next.


Working part time and taking care of two toddler girls running around the house, tends to make cooking dinner in the evenings a little tough some nights. That’s why I am a huge fan of simple and easy to make dinners. Dinners that don’t require much thought and are quick to start can help you focus and/or do other things too.

That is one of the reasons, I love a good meatloaf. Though the main reason I love meatloaf stems from my mother’s recipe and from when she would cook this meal for dinner. So, I love a good meatloaf.

Well a few years ago, I decided to start making my own meatloaf and tweaking her recipe a bit. It’s taken a few years but I have been perfecting this dish and I think I have it made perfectly now. Don’t get me wrong my mom does make a good meatloaf, however, I must confess I like my version of meatloaf so much more than hers ! Shhhh don’t tell!


This recipe is a perfect meal you can make for you and your family during the week for when you need a quick and easy dinner idea. Also, it makes great leftovers for later on in the week or even to enjoy during lunch!

  1. Preheat oven to 350 degrees Fahrenheit
  2. In a large mixing bowl, mix well the ground beef, Rotel, egg, Quaker Oats, and onion powder
  3. Pour mixture into glass cooking pan, I used a 9x13inch
  4. In another mixing bowl, mix the Heinz Ketchup, Heinz Mustard, cinnamon and brown sugar
  5. Pour liquid mixture on top of the meat and spread evenly
  6. Bake for approximately 35 minutes
  7. Let cool and enjoy!
