Healthy Recipe | Almond Butter Breakfast Cookies

Good morning my favorite foodies and Happy Monday!

I hope you all had a great weekend! This weekend, my husband and I finished up more of the yard and various house maintenance we needed to do. It feels like it is never ending when you own a home. New things keep popping up that need to be taken care of. I can’t tell you how many times we visited Ace Hardware this weekend, getting things we needed for around the house and in the yard! Thankfully, we have one not too far from where we live.

But, we think we have everything finally taken care of for when we have company over later on this month for our oldest daughter’s 3rd birthday! I still can’t believe she is turning 3 already. It feels like just yesterday my husband and I were looking at nursery decor for her and packing our hospital bag.

One of the house maintenance items we were taking care of included cleaning out the garage, where we also keep a lot of our old movies at. Have you ever watched Hocus Pocus? With how much I love this movie, I am surprised I do not have own the movie. I went through what seems like thousands of DVDs searching for this movie with no luck. Don’t worry I’m fixing that issue today and ordering it. It’s such a classic Halloween movie that I want to own it.

Lately, I have been finding myself getting hungry right before it is time for me to leave in the morning for work. Just about every morning, I make a big delicious breakfast consisting of eggs, sausage, vegetables and of course coffee. I am still finding that a few hours later, I am getting hungry again.

That’s what got me started into thinking up a good mid morning snack to bake for when I get those munchies. These cookies are a delicious healthy breakfast or a great snack for anytime during the day to help fill you up.

Ingredients

Directions

  1. Preheat oven to 325 degrees Fahrenheit.
  2. In a large mixing bowl, combine the eggs, applesauce, and coconut oil.
  3. Mix in the almond butter and vanilla extract.
  4. Add the coconut sugar mixing together all the ingredients.
  5. Add the Old Fashioned Oats, coconut flour, baking soda and cinnamon.
  6. Make sure everything is blended well.
  7. On a greased cookie sheet, scoop the dough out into cookies, I made 16 cookies.
  8. Bake at 325 degrees Fahrenheit for approximately 10-12 minutes.
