Fall Recipe | Pumpkin Spice Caramel Chip Blondies

Happy Friday everyone!

We are just about halfway through the month of October and that much closer to Halloween! It’s so exciting and fun seeing all the Halloween decorations being put up around our neighborhood. My husband and I have finally decided what we want to dress up as for Halloween. I am so excited to see how this will turn out and I can’t wait to share with it you.

So, it could just be all the rainy weather we have been experiencing lately but my house has been feeling quite a bit cooler. Apparently, it could also get as low as in the 50s tomorrow morning. I’m shocked but so excited for the weather to really cool down. I have been find myself wanting or needing a light blanket to avoid shivering while at home. Unfortunately, I’ve realized this past week that I no longer have any extra throw blankets in our house.

Well, I fixed that issue pretty quickly and did one of my favorite things to do- online shopping! I actually to my husbands approval, found the perfectly priced Fall and winter themed throw blanket from Target. Now, I am just about watching the door and delivery updates like a child waiting for Santa on Christmas Eve.

Since we are getting closer to Halloween, I have been thinking up various ways to use pumpkin in my dishes-I have quite a bit of canned pumpkin in our pantry that I need to start using up! That’s why today, I am sharing with you some very delicious Pumpkin Spice Caramel Chip Blondies. Don’t worry they are a healthier dessert option and are gluten-free. These have turned into one of my favorite desserts especially for the Fall Season. I don’t want to admit it, but I have already eaten half and it’s not even been an entire day since I baked them!

Ingredients

 

Directions

  1. Preheat oven to 350 degrees Fahrenheit
  2. Grease a 8×8 glass baking pan and set aside
  3. In a mixing bowl, combine the egg, almond butter, pumpkin, and vanilla extract
  4. Add the nutmeg, cinnamon, pumpkin spice and coconut sugar
  5. Mix in the baking soda and xanthan gum well
  6. Add the caramel morsels in and then pour into the prepared glass pan
  7. Bake at 350 degrees Fahrenheit for approximately 22 minutes
