Good morning and Happy Friday everyone!
I hope you all had a great week and that you have an even greater weekend! This past week has been quite busy in my house. My youngest child has been teething so badly that I feel like pulling out my hair! It’s her last molars that are coming in and they seem to be making her very fussy. I’m hoping they hurry up and just come on in now!
It has also been cold for a few days this week which is nice for a change but don’t worry the forecast is for it to get warmer this weekend! It did make me realize I need to get a handful of winter clothes for the select few days it is cold.
With all this cold weather and fussy babies, I have been a tad bit more pressed on time and/or not wanting to cook breakfast in the morning. That’s why today, I wanted to share one of my favorite breakfast casseroles I like to make ahead especially for a busy work week.
- 1 1/2 cup chopped peppers
- 1/2 cup chopped spinach
- 6 eggs
- 1/2 cup milk
- 1/2 tsp baking powder
- 1 cup sausage crumbles
- 1 tsp. Texas Pete
- 4 ounces of garlic and herb feta cheese crumbles
- Pepper, garlic powder, and paprika for taste
- Preheat oven to 350 degrees Fahrenheit and grease a 9 x5″ inch pan
- In a mixing bowl, combine all the ingredients well
- Pour the mixture into the greased pan
- Bake at 350 degrees Fahrenheit for approximately 35-40 minutes
- Let cool and enjoy!
