I hope you all had a wonderful week and have been staying warm! Especially, if you are in the parts of the world where the weather has been extremely cold. I had been thinking I would like to move up north, but, this past week has me changing my mind. And it’s not even that cold here in Florida! I am looking forward to a little more warmer weather and beach days!
We have made it through January and are in February now so that means Valentine’s Day is just around the corner. What are some of your favorite things to do with your special someone? This time of the year is a very important time for my husband and I. We first met each other the beginning of February in 2014. And our first Valentine’s together is a very special one to me. Valentine’s Day was technically our third date, but something that evening on our way to dinner made me realize that he was the one I wanted to spend the rest of my life with. I’ll never forget looking over at him that evening and seeing my entire future!
Lately, for Valentine’s Day, we have been grilling steaks over the grill and cooking sides for our dinner. I wanted to share with you an idea for a Valentine’s Day dinner. For our steaks we chose ribeyes and seasoned them with one of my favorite seasonings.
Then, for the sides, we had loaded mashed potato casserole and artichokes. The sides weren’t too complicated to make and turned out great.
For the loaded mashed potatoes, I took 3 potatoes and boiled them and mashed them up. I seasoned them with butter, milk, garlic powder, paprika. salt and pepper, cheese, and chives. They were baked in the oven at 350 degrees Fahrenheit for 30 minutes.
Now, for the artichokes, this was my first time ever cooking them. I boiled the artichokes after cutting them into fourths. Then, I seasoned them with garlic powder, olive oil, parmesan, and bread crumbs. I baked them at 350 degrees Fahrenheit for 25 minutes.
Everything turned out delicious and this is one of my favorite dinners we have had in a while. I hope you enjoyed and got some inspiration for your own Valentine’s Day.
